Belonging to Cabbage Family, Broccoli looks like cauliflower (Phool Gobhi) in dark green color. Great source of Vit K, C, potassium and fibre, its a delicacy in itself. Raw Broccoli contains around 90% water which means its a great food for weight-loss. Also it boosts immunity and improves digestion. It can be had as a proper vegetable, stir fried vegetable, salad, cheesy snacks , mixed in pasta or blend in a soup. First time I had it a few years back and couldn’t appreciate the taste at that time. Over years, I have tried several recipes with it and they turned out to be good both in taste and nutrition. This post is of a simple soup with quick recipe. I added onion, garlic, wheat flour (Atta) and some milk to make it creamy. There are different ways in which we can make Broccoli soup. We can mix broccoli with potato, carrot, spring onions and other vegetables of choice. I had been thinking of making a new soup today and when I saw Broccoli lying in vegetable shelf of my fridge, I started with what all I had. It was a lazy day and didn’t feel like chopping lot of vegetables. So just got hold of one small bunch of broccoli and my experiment began at that moment. It can be made as a clear soup with broccoli and veggies chopped in thin pieces. It depends how you like the soup. The best thing is that ingredients are not much of a task and yet we arrive upon a healthy snack between meal with quite less calories.

Instructions
  1. Take bunch of broccoli and separate its florets. Wash them properly under running water.

  2. Take a heavy bottom pan and add ghee to it. Then add onion and garlic. Saute on simmer for one min till they turn pink and transparent.

  3. Add Wheat Flour and saute for a min on simmer.

  4. Add broccoli florets and water. Keep them covered with an open lid. Let it cook for around 15 min till broccoli turn soft.

  5. Now veggies are mushy. Once it cools off, blend and add milk, salt, pepper. You can add more water/milk as per the consistency desired. The Broccoli Soup is ready..Enjoy it!!

    But salt and milk eat together is cause of skin disease

      Well What I have heard from my grandparents and mother-in-law is that we should avoid mixing of milk with curd. So I avoid eating Raita with Kheer. I had not heard about mixing of milk and salt is not recommended. So much that not just in soups, I add fresh Malai(Cream) and Milk to some Indian delicacies like Dal Makhani, Paneer Makhani and actually most of my paneer dishes. Sometimes when I dont have enough Malai, I add curd to these dishes.I appreciate that you informed me about it. I would check out more about it and will post if I get some good input. Till then, lets follow our respective old wives’ tale.
