Lentil Ambi(Raw Mango) Soup with a blend of veggies of the season in a simple home made way. It is basically a Dal Soup with fresh veggies and tangy flavour of Raw Mango. It can be served with Upma or rice to make it a healthy evening meal. Come Summers and my home is just flooded with Ambi(Kacche Aam). Both me and my daughter love ambis cooked in different ways: with green Chutneys in raw form, with jaggery in semi-cooked form and this Lentil Soup is an inspiration from that craving for NEW Ambi taste that we desperately wait for. The best lentil is Arhar dal. Its packed with good fibre and taste. Ambi is a rich source of VIT A and C and is low in saturated fat and cholesterol.

Wash dal under tap and dip it for ten min and you can chop veggies in the mean time.
Wash all the vegetables under tap.
Finely Chop all veggies and grate Ambi
Add All the veggies along with dal in Cooker and add salt and turmeric.
Boil it for two large whistles and simmer for 10 min.
Once it cools down, Cook it on simmer for five min.
Let all the veggies and dal have merged consistency.
Add kadi Patta and black pepper, dried red chilly(optional).
Dal Ambi Soup is ready..
Recipe Notes
You can add more vegetables as per the availability and taste. Some like Potato and Bhindi(LadyFinger) with Dal. So one can add these too.
