Hummus is a dip or thick chutney that is made from boiled and blended chickpeas (Chole) with lemon juice, olive oil and spices. One can have it with Pita bread, Falafel or any choice of Papad. There are numerous variations of Hummus. This one is the basic one. Essentially its a popular Mediterranean cuisine and now quite known in Indian cafeterias. I had it first time years back and I just couldnt understand its taste. My husband became a big fan of it and he sent me a recipe link of how several hummus can be made. I read it and didnt try it. A few years ago when I again tried it and understood its flavour, I tried it and it turned out to be great. Since then, whenever my kitchen is whistling with Choley (Chickpeas), my husband would gently remind me to make Hummus. This one is my version of hummus. Rich in protein and fibre, its a good in-between meal snack option. Generally its not very spicy but my version has green chilli or red chilli or both at times as my husband like it tangy and spicy. We have it with Papad and sometimes Namak Pare. You can make it mildly spicy by reducing chillies and can have it with your choice of bread. Remember to share your experience with me.

Take Boiled Chickpeas. For boiling chickpeas (choley), I dip raw choley in normal water fully submerged overnight (or 3 hrs before in warm water). Strain the dipped water and add choley in pressure cooker with water and salt. 2 whistles on full flame and simmer for 20 min.
For the spices, I have taken Jeera(Cumin), Salt, Black Pepper, Green chilly, Garlic cloves, Red chilli and lemon juice.
Transfer Boiled Chickpeas to a blender for making a smooth paste. Add above mentioned spices to it.
Add Lemon Juice.
Add Olive Oil. I have used Figaro Olive Oil. Generally hummus tastes better with olive oil. I have added Olive oil step by step. while blending and I have added water as well. This is because Chickpeas are dry and they absorb the oil and water soon. So blending step by step can help you control ratios of oil.
The blended Hummus looks like this. Its smooth and you can test for salt etc. If anything you feel is missing, add now and pulse for one sec. Generally it takes 2-3 min to blend it.
The Hummus is ready. Serve it with your choice of bread.
Recipe Notes
This is a simple recipe and is quick as most ingredients are easily available at home. boiling Chickpeas can take about 20 min and Hummus preparation takes about 5-10 min. You can make different Hummus by adding different ingredients to Chickpeas Like Mint, Spinach, Red Pepper etc. It depends how u like it to taste.
