The chilly winters just began and at evening time everybody is waiting for the hot bowl of soup. So for today’s evening I had planned the spicy and hot soup of veggies. My family loves the vegetables in a clear soup and my husband specially like the hot part. I am the bland flavour loving so you see how opposite we are of each other and not just in food but in several other things too. So when my kitchen is smoked with chillies, he would come upto me to ask whats being made…Deep within his heart he knows that this soup is good or not but has chilly in it. Over years, I have learnt a lot from him too as he is the best judge of the food prepared by me. He would tell whether the masalas are appropriate or not, does gravy needs to be thickened and so on. I had made this soup with the vegetables of the season: Capsicum, Red Carrot, Onion, garlic, ginger. You can add Cabbage, Mushrooms, spring onions and bell peppers. More the vegetables more the flavour. For the chilly, I have used Veeba’s Sriracha, soya sauce and vinegar(white). These i have added in small quantities but those who want more spicy can simply double the quantity. You can serve it with breads, garlic breads, bread crumbs fried.

Wash all veggies under water and chop finely onion, carrot and capsicum. Grate ginger and garlic.
Take a Pan with lid and add ghee to it. Add Ginger and garlic and saute for one min on simmer.
Once ginger garlic are light brown, add chopped onions.
Once onions are transparent, add capsicum and carrot along with salt. If you want to add more veggies, add here. Adding salt with veggies speeds up the cooking process.
Add water and cover with lid (lid should have a hole to avoid any overflow) and cook for 5-10 min. Generally overcooked veggies are avoided. Little crunchy are more tasty. You can choose to cook as per your preference.
Add Wheat flour, Sriracha Chilli Sauce, Soya Sauce, White vinegar and Black Pepper. Cook for 2 min on simmer with lid covered.

You can add more Sriracha Chilli sauce or green chilly sauce to make it more spicy and can easily reduce it to make less spicy. I have made mildly chilly as my daughter and father-in-law dont eat very spicy. Also some like it thick, they can add more wheat flour or corn flour.
