Mix Veg Soup with a blend of veggies of the season and bay leaf in a simple home made way. It can be served with garlic bread or bread toasted to make it a healthy evening meal. This is the simplest recipe I have come across and yet it won great appreciation of my husband and I kept wondering why do I get a pat on back when I just didnt make efforts. I had a proud moment and he made my day when I saw him enjoying every bit of it. Anyhow, the best thing of this recipes is that I didn’t just mash everything rather I made an absolute clear soup with finely chopped veggies and the result is spoon full of veggies..

Finely Chop all the vegetables except garlic as it has to be grated.
Heat Ghee in an open pan. Add bayleaf and garlic.
Simmer the gas and saute it.
You will get aroma of bayleaf and garlic and can cook for one min (till the raw aroma subsides).
Add all the chopped vegtables (Carrots, Beans, Potato, Onion, Corn).Add Water. Add Salt to taste. Salt is added here as it helps cook the veggies faster. You can cover it with an open lid. Simmer for 20 min.
You can check the veggies if they are cooked.If need be, you can add more water.
You can leave veggies a bit crunchy if your like that way.
Once all veggies are done, you can check the consistency of the soup.
Add Black Pepper and serve it hot with breads
I have deliberately not added any CornFlour or Maida or RiceFlour as I like the taste of original veggies itself. if someone prefers a thicker soup, can mix cornflour in water and add it to the soup.
