
Potato Sandwich is a simple yet tasty Breakfast. Today’s breakfast menu was tough to decide as we had enough of Upma, Poha, Paranthas. I boiled Potatoes in the morning to decide later on what to make of it. Luckily, even in lockdown the supplies are there and we procured fresh bread, butter and milk. And now it was evident that my kitchen would be aromatic with Potato sandwich. Making it is pretty simple. You may make grilled sandwich or tawa. I have made a crispy tawa sandwich. I have used brown bread. Mash the boiled potatoes, add chopped onions, green chillies, coriander leaves or any other vegetable of your choice. Well I was out of stock for dhaniya, so I had to skip it. The last bunch went into making the chutney. Green chillies I avoid because my father-in-law doesnt prefer to have it. For other veggies, I havent used here as somehow, being a traditional foodie family, we love it with aloo and onions and basic spices. Any other vegetable mixed with it changes the basic flavour. You may feel free to add them. Generally I make them in Butter but have you tried making them in Desi Ghee??
Trust me upon this, making these sandwiches in desi ghee make them very crispy. Yes on iron tawa only!!. Remember to have hot tawa and then make sandwiches on slow flame. These Potato sandwiches are a rich source of carbohydrates and those on diet plan can have them in moderation. For kids, its a perfect breakfast item or an evening snack.

- 4-5 medium potatoes
- 1 medium Onion
- 1 tsp red chilli powder
- 1 tsp chat masala
- 1 tsp lemon juice or amchur powder
- 1/4 tsp Ajwain(Carom Seeds)
- 10 slices bread
- 2 tablespoon Desi Ghee or butter
- salt as per taste

- Wash the potatoes under running water and remove the dirt on it. Take a pressure cooker and add potatoes with water (immerse the potatoes in water fully) boil them for 2 whistles on full and simmer for 5 min. Once cooker cools off, take the potatoes in a container
- Let them cool for sometime and then peel them off.
- Mash them with spatula or you can grate them.
- Add Chopped onions, green chillies, coriander leaves. (I had to skip coriander leaves and green chillies). Add all spices and salt here.
- Mix them well so that salt is not at one place only.
- Take a dry bread slice and spread the potato masala evenly on the bread. You may chop off the corners of bread but thats the crunchiest part so I had included it. Take the other slice and keep it over the masala spreaded slice and join them gently.
- PLace this aloo masala sandwich on a hot tawa. You may apply ghee or butter on tawa before placing the sandwich. Simmer the gas.
- Swap the side after 1-2 min. Depending on which burner you use, time may vary. So keep checking in between. Let them be crisp on both sides. Apply ghee or butter on both sides.
- The delicious Potato sandwich is ready. Serve them with green chutney or tomato ketchup.
