Tomato Soup with a blend of potato, garlic, Onion, bay leaf in a simple home made way. It can be served with garlic bread or bread toasted to make it a healthy evening meal. This recipe has been inspired by a friend of mine (Anupama Sharma). We had a movie time together with kids when we had this delicious soup and it was really a nice experience. Coming to the nutritional part, Tomato has always been a good choice for lowering BP as it has fibre, potassium and Vit C. For weight-losers, its an ideal choice. Coupling it with Potato makes the best combination to add more fibre and reduce Cholesterol. Just remember to cook it without fat.

- Wash all the vegetables under running water
- Chop all vegetables in large dices and Add them to a pressure cooker and add salt and water as much as required just to dip veggies to 0.5 inch. Put the flame on full for two whistles and simmer for five min.
- After the cooker cools off, open the lid. Remove Bay-leaf.
- Blend all the ingredients using hand-blender or mixer-grinder.
- Sieve the ingredients back to cooker or a pan with lid. Add Bay-leaf.
- Boil for 1 min and Cook it till the desired consistency is achieved. Add oregano and pepper to taste. The Pomato Soup is ready. Enjoy with Hot breads!!
If you want to add ghee, you can add at the time of adding chopped veggies. So, add ghee in cooker, add garlic, bay leaf. Let their raw aroma go away and cook on simmer for a min. add all veggies and then follow the steps.
