Pumpkin is a super food. Its Rich in Vitamin A, iron, zinc and fibre. Its a food that has high nutritive value with few calories. Having a bowl of Pumpkin Soup as evening snack is the healthy meal for people on diet plan. It keeps you full for longer (Thanks to its fibre-richness) and the hunger pangs are kept away in best possible way. As far as flavour is concerned, Its not spicy. Its sweet naturally. So its a great choice for kids. Those who prefer a spicy one, can add Red Chillies and garlic. Here we have the Green body pumpkin more commonly available. Hence the light yellow color. If you have orange one, it might give a dark yellow/orange color. To make it creamy, I haven’t used any cheese, I just added chopped Pumpkin to Desi Ghee. Cheese lovers can add cheese once its almost cooked to have it more creamy. Those who love fresh cream, can chip off Fresh cream off the boiled milk, Beat it to a smooth paste and add it once pumpkin is cooked. It can be slightly runny but then you may boil it longer to evaporate the extra water else the thin one is equally good (matter of choice).
It was a winter afternoon when I planned making this soup for my father-in-law as he was not well that day. To make his constipation go, I had this idea and it really worked. Little bit of hard-work and Indian kitchen has lot to offer when it comes to managing health. I prefer my kitchen to rule over the medicines. Medicines are the last resort if illness is beyond control. So why not to make it a healthy regime by the use of Indian spices and food.

Chop the pumpkin in small chunks. Wash it under running water.
Take a Pan and Add Desi ghee to it.
Add chopped Pumpkin to it.
Cover it with lid and put the flame on simmer.
Pumpkin would leave water while its being cooked and it starts getting shrunk and soften up. If it doesn't happen for some reason, you may add little salt and water here so that it doesn't stick to bottom of the pan.
Slowly It would be cooked and it looks like a thick paste. It takes around 10-15 min depending upon the total quantity. You may add more water and salt and black pepper. Boil for 2 min and mix well.

If you want it very smooth, you may blend the cooked Pumpkin with hand blender. If the pumpkin is raw, then usually blending is not required.
